To create good, beautiful and practical products, you need ideas, taste and hours of cooking, prototyping and tasting. At COCAGNE, the R&D team is led by Chef Laurent Fortin. He joined the team after a career in France and abroad in the kitchens of prestigious groups. He is assisted by Justine Piefort, a food engineer specializing in formulation and sensory analysis.
