These small dome-shaped capsules of freshness are a concentrate of good and beautiful: a crispy biscuit that is a combination of Breton tradition (butter, sugar and flour), common sense (using broken “ugly brioches”) and almond powder. The fruit pastry cream incorporates a little white chocolate for taste and consistency. All well rounded under a fine jelly.
Freezing the domes keeps the sphere perfect until it is used again for tasting.
